I recently joined this club where the shuttles they use are quite a bit slower than I'm used to. What kind of racket/string are suitable for this kind of shuttles in terms of balance / stiffness/ weight / string tension / thickness? Thanks in advance.

Gosh, whenever I play with slow shuttles it really puts a test on our stamina. The rallies are just sooo long and repetitive.
In my experiences... just use your current racket and favorite (same) string. But lower tension from 2lbs and keep lower until you feel confident to hit baseline to baseline clear. It's work for me to keep enjoying badminton with current slow shuttlecock season, just remember our previous string tension, and don't forget to set back whenever this season end.
in terms of rackets, I guess head heavier rackets with medium stiffness. Speedy racket wouldn't be as required since you'll have plenty of time to defend if the shuttle is slow, so just get something that gives you plenty of power like the one I described above.
I suggest to make the correct speed test and let other, even better players do it. If it shows turns out that the shuttles are indeed too slow according to the guideline in the rules, you can accept it or discuss. From my experience a discussion is a sensitive issue. You are new to the club and question their behavior to play with slower shuttles (alot average hobby club players do, because it is easier to keep it in, easier to defend and lead to longer rallies, which gives the impression to play better badminton) will harm your image. If it turns out that they are correct speed (within in the range but only on the slightly slower side) I only suggest lowering the string tension by 1-2lbs. Different racket seems exaggerated for this. I would look out for a new club if they are not interested to follow the rules.
It's not that big a deal. I even enjoy the change in pace sometimes. I play here only once a week. This club is nearby so it's convenient. I guess I just want to know what would be the correct racket characteristic not just for this club, but sometimes I joined strangers game that uses slow shuttles too. Would be nice to have a backup racket for such occasions.
And manipulate them to the correct speed or donating shuttles at correct speed are not an option for you which is less costly instead of ending with a badminton bag from driver to putter for any situation?
Maybe OP is just looking for a reason to get yet another racket? Nothing wrong with having a beefier racket around Not like he has to switch from a Nonoray 800 to a Z-Force 2 (at least I hope that is not the intended upgrade path)
This is something I can support. A crappy racket for unfamiliar partners and bad playing conditions is something I also have in my bag.
